Yeast particularly adapted to fermentation in barrels, for white wines which are round on the palate, and which demonstrate varietal specificity.

"Terroir" selection. Grape varieties: Chardonnay, Sémillon, Viognier.

  • Isolated in Burgundy.
  • POF(-) character with no vinyl phenol formation, generating a delicate, clean wine profile.
  • High polysaccharide production.
  • Recommended for enhanced palate volume, strong varietal expression, barrel fermentation.

DOSAGE:

• 20 - 30 g/hL (200 - 300 ppm).
